1 2/3 cup of sugar
3 cups of flour
1 tsp of baking powder
1/4 tsp of salt
1 1/2 stick of cold butter (12 tbsp)-keep in fridge until ready to use
1 egg, beaten
1 tsp Mexican Vanilla
1 lb of strawberries, hulled and sliced
1/2 pint of blueberries
2 tbsp of corn starch

Preheat oven to 375 degrees F. Grease 8x8 pan or line with parchment. This is essential to be able to easily cut the bars.

Hull and slice strawberries. (You can treat your board with mineral oil if the strawberries have stained your board.)
Place strawberries and blueberries in a bowl. Add 1/3 cup of sugar and 2 tbsp of cornstarch. Mix until fruit is evenly coated. Set aside.

In a medium mixing bowl stir together 1 cup of sugar, 3 cups of flour, 1/4 tsp of salt, 1 tsp of baking powder.
Crack one egg in a separate bowl, beat with fork add 1 tsp of Mexican Vanilla. Add egg and vanilla to dry ingredients. Mix until evenly distributed.
Take butter out of fridge cut into small pieces. Add butter to flour and egg mixture. Cut in butter with fork or pastry cutter until small crumbly pieces.
Take crumb mixture and press into 8x8 pan. This will be your bottom crust so make sure to press down firmly. Top bottom crust with strawberries and blueberries. Take remaining crumb mixture and add to the top of fruit. This will not cover completely. This way all of your beautiful red and blue fruit will show through.
Bake for 45-50 minutes.
Cool before putting in fridge or freezer. Chill the bars before cutting.
